Strawberry, Beet, Banana Smoothie

Here’s a veggie smoothie you’ll be rooting for! Seriously, this root vegetable and fresh fruit smoothie is ridiculously fast to make and very easy on the eyes (making it a great way to feed your kids healthily without a battle). The fresh fruit gives a natural sweetness that helps young eaters who wouldn’t otherwise be enthralled with eating a beet on its own. For parents looking to eat a little healthier this also makes an incredible breakfast on the run. You can always add a scoop of protein powder or nut butter to make it a bit more filling.

Red Smoothie
Servings: about 2 cups (1 large adult portion or 2 small kid portions)
Ingredients:

1/4 cup diced steamed beets (available in the produce aisle- already cooked)
3/4 cup fresh/frozen strawberries
1 banana
1/2 cup almond milk/oat milk

Make It:
In a high-powered blender, combine ingredients and puree until smooth. I use a Magic Bullet Blender which makes it easy to work in individual portions. Serve room temperature or chilled.

Tip:
You can prep the ingredients in advance and freeze in a resealable plastic/eco-friendly bag for easy use. Just add the banana and almond milk just before making.
