Carrot, Orange and Sweet Potato Smoothie

You don’t have to be Bugs Bunny to love this carrot infused smoothie! Do my kids eat carrots? Well, one of them does willingly and the other one does through a straw. This ultra-easy vegan smoothie is perfect for getting those servings of vegetables in throughout the day.

Orange Smoothie
Makes about 2 cups (perfect for 3 small servings or one large adult glass)
Ingredients:

1/2 cup carrot
1/2 cup fresh orange (about 1 whole clementine or 1/2 regular orange)
1/4 cup cooked sweet potato (cooled and skinned)
1 banana

Make It:
In a high-powered blender, combine carrot and orange with 1/4 cup of water. I use a Magic Bullet Blender which is ideal for these smaller batch smoothies. Puree on high until well mixed. Strain through a cheesecloth or fine tea towel (the ones from Ikea work just fine) into a bowl. Ring out all the liquid to keep. You can save the pulp for added fiber to baked goods or for compost. You can substitute carrot juice for this step however most carrot juice has added sugar.

Next, mix juice with your cooked and cooled sweet potato and your banana. Puree on high until smooth and creamy. Serve room temperature or slightly chilled.
