Roasted Cauliflower with Turmeric and Tahini

Roasted cauliflower is so addictive to me it is like popcorn! The turmeric in this recipe has amazing health benefits and the roasting process gives this veggie a crunch that makes it yummy and enticing to kids. For an amazing vegan snack that the whole family can enjoy, look no further!

Roasted Cauliflower with Turmeric and Tahini
1 large cauliflower/2 small (8 cups chopped), larger leaves and ½ inch of stem removed
1/4 cup olive oil
1 teaspoon turmeric
1/2 teaspoon smoked paprika
1 teaspoon sea salt
1/2 teaspoon garlic powder
1 tablespoon lemon juice
2 tablespoons well mixed tahini
1/4 cup fresh cilantro leaves, chopped

Make It:
Preheat your oven to 400F then line a baking sheet with aluminum foil.

In a large bowl, toss cauliflower pieces with olive oil and spices. Make sure each piece is gleaming yellow, glistening with olive oil and that you scrape down the extra olive oil on bowl with a spatula onto the cauliflower.

Arrange the cauliflower in a single layer on the baking sheet and roast in the oven for 45 minutes.

Set onto serving plate and drizzle with lemon juice and tahini. Top with cilantro leaves and serve warm.
