Mixed Berry and Beet Smoothie

A deep purple color makes this smoothie a stand out. The benefit is you can use the fresh berries you have on hand or substitute an easy frozen blend. Prep this one in advance for a delicious way to add a little nutrition to your day. This one is also great for kids who need a little encouragement in getting in their servings of fresh fruits and vegetables.

Purple Smoothie
Makes: about 2 cups
Ingredients:

1/4 cup steamed beets (you can make yourself or find pre-cooked in the produce section at the grocery)
1 cup dark fruit (use fresh blackberries, blueberries, raspberries, cherries or a frozen blend)
1 tablespoon beet juice (I simply add the juice from the bag of pre-steamed beets or use the juice from the pan when I roast)
1 cup coconut milk/coconut water

Make It:
In a high-powered blender, puree all ingredients until smooth. I use a Magic Bullet Blender which allows me to easily make smaller servings on the fly. Serve room temperature or chilled.

Tip:
You can prep the ingredients in advance and freeze in a resealable plastic/eco-friendly bag for easy use. Just add any liquid just before making. Note if you freeze your all your solid ingredients, the consistency will be a thicker. You can compensate for this by adding more coconut milk/water.
