Beet Hummus

Beet Hummus
Makes about 2 cups

This hummus is as pretty as it is tasty. It makes the ideal healthy snack or sandwich spread.

Ingredients:
1 (15.5 oz) can of chickpeas, drained
1 medium cooked beet, plus 1 teaspoon juice
1 tablespoon olive oil
1 tablespoon fresh lemon juice
2 tablespoons tahini
2 tablespoons water
1/4 teaspoon salt

Make It:
In a food processor or bullet, blend all ingredients until smooth.

Serve with your favorite veggies, crackers or pita chips.
