Turkey and Kale Sausage Rolls

Sausage rolls are the posh cousins of pigs in a blanket. These tasty rolls are filled with a mix of turkey sausage and kale to pack in a little nutrition along with that irresistible taste. So whether you’re throwing together a kid-friendly dinner or holiday appetizer, you’re covered!

Turkey and Kale Sausage Rolls
Makes about 28:
Ingredients:

1 package puff pastry dough, defrosted
2 tablespoons olive oil
1/2 cup finely diced vidalia onion
1 large clove of garlic, minced
1/2 cup finely chopped kale (stems removed)
Salt and freshly cracked pepper
1 lb. turkey meat
1/2 cup breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon thyme
2 large eggs, divided
Poppy seeds for garnish, optional
Ketchup for dipping, optional

Make It:
Defrost your puff pastry in the refrigerator overnight. Or, if you’re pressed for time you can microwave to defrost according to package instructions.

Preheat the oven to 400F. Line two baking sheets with parchment paper.

In a medium sized frying pan, add your olive oil and cook your onion over medium-high heat until translucent (about 5 minutes). Stir in garlic and kale in the last minute. Season with salt and pepper.

In a large bowl, mix turkey with cooked onion and kale mixture, breadcrumbs, garlic powder, thyme and 1 egg. Season mixture once more with salt and pepper.

Divide your puff pastry into 4 even sheets. Divide your turkey mixture into 4 balls. Roll one ball of your turkey mixture into a long sausage-like roll and place in the center of one puff pastry sheet. Repeat with remaining turkey and puff pastry.

Next, in a small bowl whip your remaining egg with a tablespoon of water to make an egg wash. This is an important step that separates pale sausage rolls from deliciously golden ones. Using a pastry brush, brush the one side of of each puff pastry and then roll them to seal, placing the sealed edge underneath each roll.

Brush the tops of each long roll with egg wash and sprinkle with poppy seeds if using (I think they look pretty and they remind my kids of everything bagels :). Then slice each roll horizontally, creating 1 inch pieces. Separate these pieces about an inch apart on the baking sheets.

Bake for 20-25 minutes until golden brown and flaky. Allow to cool before serving.
